Pompoensoep met zoete aardappel
Ingrediënten (voor 6 kommen)
– 1 flespompoen
– 400 gram zoete aardappel
– 3 el olijfolie
– 2 teentjes knoflook
– 2 uien
– 1 tl gemalen kaneel
– 2 el honing
– 4 takjes tijm
– 2 groentebouillonblokjes
Bereidingswijze
1. Was de pompoen en snijdt deze in kleine stukken. Verwijder de draden en pitten. Schil de zoete aardappel en snijdt deze eveneens in kleine stukken.
2. Verhit olijfolie in een soeppan en fruit de ui en knoflook ongeveer 2 minuten. Schep er de pompoen, aardappel, kaneel, honing en tijmblaadjes doorheen.
3. Voeg de bouillonblokjes en 1 liter water toe en breng het geheel aan de kook. Kook de soep in 15 minuten op laag vuur gaar.
4. Pureer de soep met een staafmixer. Breng vervolgens op smaak met zout en peper.
